I rent a place with an old american gas stove/range. All four burners are of the same diameter (6 cm) and the maximum flame is around 10-11 cm wide. And the flame is intense.
I get a hot spot even on my cast iron pan (bottom diameter 24 cm). The thin pans get strong hot spots super quickly and I manage to cook something without burning only on very low heat
I started to look for a heat diffuser, which would allow to spread the flame/heat more evenly and not to loose to much heat as I am often cooking for a large family and the pans and pot are big and full.
What would be the best material and size of the heat diffuser in my case? I read a lot about cast iron, aluminium, copper heat difdusers and got confused what would be the best option for me.
Currently I am in Japan, but I am ready to order from US or Europe. Because now it a big discomfort to fight hot spot and burning stuff in the pan.
