Best way to cook potatoes so they are soft?

So I tried making tikka masala with potatoes instead of chicken, and it turned out well except for that most of my potatoes were still quite hard in the middle. I was hoping to get a softer (but not mushy) texture, so I was wondering what the best way to go about that would be for next time!

This time, I grilled them in a pan with oil on medium heat. To be honest, I have no idea how long they were on for. Any tips or info is greatly appreciated as I am pretty new to cooking!
