Boring crepes

I had the most delicious savory crepes in Paris. But recreating them isn’t as easy as I thought. I followed a simple recipe of 1 cup Red Mill buckwheat flour and added around 1 1-2 cups of water. Plus a dash of salt. The crepes cooked perfectly. I added shredded Gruyere cheese. It had no flavor!!! How can I improve the flavor of the crepe?
