Soaking the potatoes in water to remove starch.
Boiling the potatoes, then placing them in cold water.
Drying them, then frying them lightly.
Drying them again, then freezing them.
I would like to know the best steps and their order, as well as the boiling and frying times with the appropriate temperatures. I have tried several methods, but I found the potatoes to be fragile and prone to breaking.
