Hi there, I've cooked with plantains a handful of times before, so I'm familiar with what the inside of one should look like in various stages of ripeness. I made maduros tonight and as I was cutting the plantain up I came across this tough white substance streaking near the middle. I didn't think much of it and just continued on. When I was eating them it was very obvious the slices that had a decent chunk of this stuff were not completely edible. I had to eat around the white stuff.
I'll attach a picture from before I cooked them. Does anyone know what this stuff is?
