I was watching Test Kitchen's What's Eating Dan and he was suggesting to use gelatin in meatballs.
I bought a gelatin pack and the instructions said to add the gelatin packet to water then add boiling water and mix. I did that but it is still liquid.
When does it turn into gelatin? Or do I just add it to the meatball mixture now and it turns into gelatin in the oven? The instructions didn't mention anything about waiting or chilling. Do I just chill the gelatin mixture and wait, and then break up the gelatin into the meatball mixture?

I chilled the gelatin mixture in the fridge and it turned into gelatin. I mixed the gelatin into the meatball mixture.
