Is a huge sirloin tip beef tip peeled good for making sandwich/deli meat?

I bought a whole sirloin tip beef tip peeled AA that is 6.96 kg (15.25 lbs) because it was on for 50% off at the wholesaler.

I read that sirloin is good for making thin deli/sandwich meat from, is this true?

I have some recipes online but they are for much smaller roasts. Should I watch a video to see how to cut up the roast or should I roast it whole? Or should I use another technique? I have a smoker, a Weber that I won in a contest last winter but it's still new in the box and I haven't used it yet so I'm a bit scared to use it on this large beast.
