Hello everyone!
I absolutely love this recipe for monkfish https://m.independent.ie/life/food-drink/monkfish-with-butternut-squash-fondant-and-sauce-vierge/26710748.html and am planning to serve it at a dinner party for some friends at the weekend. One of my guests doesn’t eat pork, and the recipe calls for pancetta to wrap the beans. I know I could just separate one portion of beans out, and wrap everyone else’s - but before I do that, is there anything non-pork that would work in this recipe?
I don’t want her to feel like I put less effort into her meal, and if I could do all the meals the same with the substitute, I think that might be nicer.
