How do diff noodles compare ( wheat vs rice vs buckwheat soba ) ?

Want to know what these different noodles go with.

I haven't had the buckwheat soba yet.. and prefer the flat rice ones over the standard wheat ones coz I find them dry-ish.

I like to have noodles in a saucy or soupy style.
