Need help/consultation for Fried Green Tomatoes using Frozen Tomato Puree

Hello, I am planning on making fried green tomato balls with frozen green tomato puree, and am wondering if there is anything more to consider or if there are any possible complications to my process:

  • Pan roast green/unripe tomatoes until the meat and fibers have broken down
  • Puree the roasted and broken down green tomatoes with some green onions.
  • Pour puree into spherical molds and freeze for 12 hrs.
  • Take molds out of freezer and coat frozen tomato balls in egg dredging and flour/cornmeal dredging
  • Fry
