I tried to re-create Matty Matheson's Chicken Adobo. I followed the instructions in the video description. I added the marinating liquid per the instructions, brought to a boil, and simmered for an hour. After an hour the sauce did not reduce at all. I continued simmering for another 30 minutes but the liquid still did not reduce. What am I doing wrong? In the video, Matty's sauce reduces and thickens only after 45 minutes.
