When to add bell peppers to a sauce

I'm trying my hand at a homeade Italian gravy sauce this weekend, the type you simmer 4-6 hours. The recipe doesn't call for bell peppers, but I would like to add some. Do I add them at the beginning with the onions and garlic, or will the just completely disintegrate after simmering for 5 hours?
