Homemade soy milk slightly sour?

The beans I get are fresh (not a bad smell) and I make the soy milk the day after purchase. Soak overnight on the counter, blend with purified water, and simmer for 20 min then strain.

It's not SUPER sour but I don't get it. I store the beans in mason jars when I don't use them all. Am I doing something wrong?
