Hello everyone I hope you are well. I have been in the kitchen for 3 years only and later did cordon bleu grand diplome where I developed my pastry and cuisine skills. There is an opportunity for me to join masterchef Turkey this year but I have some questions. Any answer will be appreciated so thanks in advance.
I don't know how it is done in other countries but in Turkeys Masterchef they give you a dish without a recipe and you have to make it in time (mostly 45 mins).
I am mostly okay with the cuisine elements and can figure out at least a similar item thats desired but I am hesitant that I can do that for deserts and pastry in general.
I have been thinking and searching about it but failed to find the information. The question is, is there a set ratio when it comes to dough in general. I do know the ingredients in general but, even now I wouldnt be able to do a brioche bun out of the blue without a recipe.
Any suggestion is valuable.
