Can I store 'Schupfnudeln' dough overnight?

I intend to try to make 'schupfnudeln' (german potato noodles) like in the link below. My core question: Can I prepare the dough one day in advance, store it in the fridge overnight, and then form and cook the final product the next day?

What are the adverse consequences (if any) of not preparing and cooking the dough on the same day.
