Gross garlic but why?

I had a lazy dinner this eve, just shoved a load of med veg in the oven and put it with some gnocchi. Anyway I absent mindedly crushed some garlic -realising after I should have just added a whole clove... but I thought what the heck and just added in the crushed clump... Then after it had all roasted I tasted the clump and it was MINGING ... my question is why?
