How do you know if you've seasoned correctly?

I'm no pro, or even good particularly at cooking but something that always throws me is theost basic part of cooking, seasoning.

"Add salt and pepper to taste"

I can't determine what's the correct amount, I always add the salt and the pepper stir it in and taste again, exactly the same. Even when I'm more adventurous and add probably too much salt and pepper, tastes no different.

What am I actually looking for here in terms of taste? A distinct taste of salt? A distinct taste of pepper?

How to I season food correctly?

Just to add I use sea salt not table salt
