Cashew Milk Eggnog - I have it tasting great, but it always separates after sitting in the fridge. Any solution?

So just for fun I decided to try making a "diet" (lol) eggnog based on Alton Brown's amazing recipe. And surprisingly, it turned out to be amazing! The taste is almost identical! And if I dial in the ratio of cornstarch to thicken it, I'm confident the thickness will be the same as well.

The only thing is, it separates when sitting in the fridge. There's a clear layer on top (either booze, water from the cashew milk, both, not sure - I always give it a shake before remembering to taste it and see). I assume this has to do with milk being homogenized and cashew milk not? Maybe something else entirely, y'all are the experts/ professionals. Any ideas of a way to address the separation issue?
