How to make honey lollipops, but healthy!

Hey all! I made some amazing honey lollipops by melting honey to 300 defree fahrenheit and pouring it into lollipop molds (no other ingredients). They tasted amazing however I recently learned that boiling honey past 95 fahrenheit literally kills all the healthy benefits. So I made a new batch at 95, but as predicted they failed to harden / solidify even after being kept in the fridge. Does anyone have any idea how I can make these pops harden, whilst keeping them healthy?
