I'm looking to make some hot apple cider with whisky in it. I'm wondering how long i can heat it and at what temperature and still have the whisky retain some potency. I see charts tracking how much alcohol boils off when it is hearted to its boiling temperature of 173F, which shows 60% is evaporated after only about 15 minutes.
But the mixture i'm heating is staying 120-140F. Will a significant amount of alcohol still evaporate over the course of a few hours? Days?
Any ideas on where i can find more info on this?
