I have a couple of large zucchini that I need to use up. I want to use one of them to make pizza bites. I've had them a few times. I love the taste, but hate the soft texture. I'm thinking I'll par-bake discs after a salt cure to remove moisture and firm up the meat, then add toppings and do a quick broil.
This is the only way I can think of to produce a firm texture, but I'm wondering if y'all know of a better method?
