Homemade shop Koji smelling like artificial banana

I made some shio Koji a few months back and now when I open the container of it, I get this deep whiff of artificial yellow banana smell. And a hint of alcohol

Any food scientists here have any clue why this is happening and if it's unsafe to consume?

Very weird it is super uncanny how similar it is to those hard candied yellow bananas you see in candy stores.
