Will gelatine powder work the same as agar agar for vegetable pearls or balsamic pearls?

I am going to try to make some different flavour vegetable pearls and balsamic (sometimes called vegan caivar). Online there were two options, one included using agar agar with the liquid before you drop it into very chilled oil. There was a separate one using some powders that I have never seen before (can I can't remember).

However reviewing the recepies, I see it's about setting the liquid.. So I already have gelatine grannuals and this is more about flavour, texture and method not dietary requiremt. Will gelatine grannuals work or does it have to be other ingredients like agar agar?
