Sizzling Sea Bass

Have had a dish called "Sizzling Sea Bass" on the English menus of a few Chinese restaurants that I love, the whole fish comes in foil on a cast iron dish with a sauce of chillis and onions.
However despite a good bit of looking I can't find any information on the origin of the dish, which region in China its specific to (if any) etc.
Any info would be much appreciated!
