Hash-browns tasting funny? (repost)

I'm going for McDonald's hash browns or something comparable because my hash browns taste like egg and black pepper, and they're rather mushy on the inside even if they're cooked on the outside.

After grating the potatoes, I rinsed them in cold water and chilled them for 30 minutes before draining and raining them out. After I added the seasoning, salt, black pepper, and egg (as a control test, I also added garlic and a herb with onion powder). I freeze them for 45 minutes overnight before cooking. I'll also mention that I don't have a thermometer to see how hot the oil is, but I don't think it would have made much of a difference because I normally cook it on 4-6 heat.
