Do You Eat The Craggy Bits On Heirloom Tomatoes ?

Heirloom tomatoes are delicious, but so often they have the unappetizing hard and off-color crevices in the skin.

Do you serve those? Eat those? Cut them off? Use them in other recipes? And what is that anyway?

I typically cut those parts off and then eat them myself but I just wonder what most people do. And what about restaurants?
