Beef Bourgogne Help?

I tried making Beef Bourgogne but it doesn’t seem to be turning out as I expected; that dark, rich sauce just looks light and more like gravy than anything; I used this video for reference https://youtube.com/watch?v=8DCw_eR_iPA&feature=shareb but I used my crock pot instead of the oven. I left it on low for 3 hours but it wasn’t thickening so I added a water/flour slurry and while now it’s thick, it’s also lighter and looks more like gravy. Any suggestions?
