I’ve tried experimenting with a few different options including hotter or cooler cast iron pan, broiler (don’t do that, or do it better than I did), longer cooks. But I can’t seem to get it the right mix of puffy and crispy but soft in the middle. Next step is to try a two-step cook with a little added butter painted on top before the second pass on the oven.
Any tips on how to improve my Dutch Baby game would be appreciated.
