Help, my home made nutella fermented

I made two jars of nutella with 2 cups of hazelnuts the other day. Out of the jars, I had placed one in the fridge and another outside. Suddenly a day later, I discovered the jar that was unrefrigerated was fermenting like yeast. Both the smell and the texture was similar to bread that had been proofed or risen. The container that had been refrigerated was perfectly normal. If it helps, dates were used as a sweetner in the recipe. Pls let me know if anyone knows anything about this!
