Tasteless chicken stock

I made chicken stock in an instant pot, and based it on a recipe on youtube from Americas test kitchen. The stock looks great but it tastes very watery. My initial thought was that I may have used too much water but I also used very little salt.

Does anyone have any tips on making better chicken stock?
