Braised ribs sauce keeps evaporating in dutch oven

To start off, I've made this dish at least 10 times and every time has been a success. However, the last 2 times I've made it the liquid inside has completely dried out leaving the ribs inedible and dry.

I haven't changed anything from the previous times I've made it. Bring dutch oven to a boil, then transfer to preheated oven at 360F for 3 hours.

I can bring the heat down lower but why did it work the last 8 times and this one is a disaster?

Edit: the reason why I set it to 360 is from all the recipes I read online. Seemed to be the common number
