Question about burger/fries

Just had a burger and fries for lunch. Now I got questions about both.

Burger - I ordered the burger medium temp, and while I’m pretty sure it was cooked correctly, for some reason the patty was colored brown throughout, no pink. Again, it had the texture/temp of medium, just didn’t look it. Is it the quality of beef? Seasoning mixed in the patty? Really curious

Fries - these fries were the one with “rough” surfaces, idk how else to describe them. Like craggy. I’ve had fries like these before, but never know how they’re made like this. Starch coating or something? Longer parcook time? Gimme your thoughts
