My 2 hr simmer was just a warm, what now?

Stew, Dutch oven, stovetop. Was supposed to have set it to simmer last 2 hrs but I had it set too low. I knew this but forgot to bump it up before walking away. Potatoes and carrots nowhere near done … am I just on to plan B for dinner at this point? Any shortcuts or hacks?
