How to get Russian blinis flat?

Hello culinarians — I’m making blinis with this recipe and it tastes great.

The problem is half the time they come out nicely browned and flat with the bubbles they’re supposed to have, and the other half of the time they curl up so they can’t get browned besides around the edges a few patches here and there (it looks it’s because like the surface isn’t touching the pan due to the curling) and the bubble don’t form.) They don’t cook evenly when this happens.

This is all in the course of one batch and one cooking session on the same pan. I’m at a loss.
