Hello, I recently attempted to sharpen a Miyabi knife I haven't used for a while.
Using a Spydero sharpening system, I did three sessions of sharpening (20 passes on each of 4 sets of stones, 80 total passes per session), and it didn't yield a great result. Syderco instructions below: https://i.imgur.com/lnUdIYy.jpg https://i.imgur.com/TVzA5nr.jpg
I still had trouble cutting through paper and I tested slicing a small lemon peel garnish with disappointing results.
It says I can keep repeating the process until I get a desired result, but I'm unsure if I need to employ a more aggressive technique. Maybe I just need to keep at it with the Spyderco.
There is an option for removing shoulders after unsatisfactory results, which I'm unfamiliar with. Just don't want to mess something up.
The blade edge does look pretty beat up, with little chips and ridges down the blade.
