Hello,
I am looking for recommendations for a sauce to pair with a dry aged rib eye or dry aged NY strip steak. I made a couple of red wine sauces but they aren't my favorite. I also was thinking of making a balsamic reduction but I feel that pairs better with pork. This will be my first time trying dry aged beef and I am unsure of what to do.
Also, if you are in the NOLA area and know where to get USDA approved venison, I'd be forever grateful.
