I plan to coat a butterflied and flattened chicken breast with flour, then egg, and then ground panko breadcrumbs to make a chicken schnitzel.
I don't want to fry it in as much oil as the average youtube video I've seen, but just baking it might leave it dry and boring.
Could I fry each side in a bit of oil for maybe a minute each side and then put in the oven for maybe 12 mins, would that be a good compromise? Or any other suggestions? Cheers.
