So Much Monkfish! Please share recipes good to cook and freeze in food saver for easy pull & heat later.

Ordered what I thought was a small amount of monkfish to supplement thanksgiving and received 8lbs. It's just my mother and I wanted to leave her with precooked portions(to freeze) to just have to reheat after I've left. I have a Foodsaver to use. Just a bit overwhelmed and looking for any additional ideas here.
