Have a recipe for pumpkin curry but want to add chicken breast without overcooking it

Hi!

I found a tasty-looking vegetarian pumpkin curry recipe and I’d like to add chicken to it, but I’m not sure of the best way. At first I thought I’d sauté until it’s cooked through, then shred it, then add it once I’ve combined everything with the coconut milk and let it all simmer for 15 minutes.

But I don’t want to overcook the chicken. Is it better to dice the chicken and sauté it with the aromatics/veggies (for about 5 minutes) and let it finish cooking while everything simmers? Or is there another way to do this?
