Extreme carryover cooking

Any idea why my lamb carryover temperature rose 20+ degrees? Took it out at 128 and put it on a different tray expecting it to carryover to around 135 and it rose all the way to 152. I checked it with 2 probes including the one it cooked with and both read around 150. Very confused and frustrated.
