I'm trying to fold whipped cream together with melted chocolate to make chocolate mousse. I melted the chocolate slowly in the microwave and the whipped cream is from a spray can. However, since the whipped cream is cold and the chocolate is warm, it's solidifying when I try to combine them, resulting in tiny flakes of chocolate which are kinda crunchy in the final mousse, rather than a nice smooth texture.
I can't warm up the whipped cream because it'll deflate and become liquid.
I can't wait for the chocolate to cool because it'll solidify.
How do I prevent this? Any suggestions?
