Homemade mayonnaise too thin?

I'm using brian lagerstrom's mayo recipe from his potato salad video.

The only thing I did differently was use a hand mixer with a whisk attachment instead of an immersion blender.

The finished mayo doesn't look seperated or anything, but it's not as thick as store bought mayo. It's a little bit thick but also kind of pourable if that makes sense.

Is it because I used a hand mixer to make it? Did I not mix it enough? It took me about 15-20 minutes on high speed to get all of the oil mixed in (I added it slowly).
