Why are we punching out air of a risen dough?

In a lot of recipes we combine the ingredients, incorporate them throughly and let them rise (often until doubled in size) but then knead or punch out the air that had formed. I'm wondering why this is done. What would happen if we let the air stay in?

I hope this is the right flair, might be food science (fermentation, etc)
