What makes hot dogs shrink and shrivel?

We cooked 100% all beef hot dogs on the grill. They were slightly browned, not burnt, and plumped nicely. After taking them off the grill and putting them on a serving plate, they shrunk and shriveled up.

I understand that hot dogs contain starch granules that interact with water and cause the hot dog to plump during cooking. But what causes the shrinking and shriveling?
