Why does my knife lose its sharpness within days?

So my knife is a Tojiro DP chef knife so it's decent enough. I use 1000 and 5000 grit whetstones in order to sharpen it. I can get it to the sharpness I want pretty easily, but within literally 2 days (even with no use) it will lose a large large majority of its sharpness. I recently tried using the back of a leather belt in order to remove the burr after sharpening but that doesn't seem to have done anything to help.

I'm kinda stumped. Within literally 2 days it will lose all its sharpness to the point where it can go from easily shaving through paper to not even being able to cut it at all.

Any advice on what to do?
