Can I egg wash & stick sesame seeds to a BAKED loaf of bread?

Im trying to ~*~surprise~*~ my partner on the 14th with New Orleans muffulettas for our indoor picnic. Unfortunately, I can't eat gluten, and the bread for muffulettas has been impossible to find where I live. Typically the sandwich is made w/ a boule covered in sesame seeds cut in half horizontally.

I was hoping to do a best impersonation with a nice round loaf (homestyle or challah) from my local GF bakery, and try to see add that sesame seed topping at home myself. Any way to do this?

Otherwise, my next move was to just use GF foccacia instead, because it's delicious.
