White Pepper or Black Pepper?

Do you always follow recipe specifications? Why or why not? If a recipe calls for a specific peppercorn I will use it. I don't think white, pink, and black peppercorns are interchangeable. They all have a distinct flavor. For example I have an apple coleslaw recipe that calls for white pepper and black pepper really changes the outcome and it's not as good. However, I will use a blend in a country gravy or mashed potatoes that calls for black pepper if I have it on hand. Just curious about thoughts and preferences on the subject.
