I'm hosting a dinner party and want to include a breaded/ fried eggplant component to my gnocchi dish. Would it be possible to flour/egg/breadcrumb eggplant, fry, and then freeze the weekend before? Ideally I'd be able to then throw them on some parchment paper into the oven like 350F for 15min or so for dinner. Will the eggplant hold up?
