I got a 8lb Prime grade rib roast in the fridge seasoned with tons of salt and pepper. We’re cooking it tomorrow for the holiday. Decided to go with the reverse sear oven method, but I’m still unsure about what additional seasonings to add before the cook.
Do I roast as is, or do I rub on grain mustard, garlic, and other herbs? I don’t want to take away from the meat flavor, but also don’t want to under season.
Any insight would be extremely helpful. Thanks!
