Sorry if this is the wrong subreddit!
My dad is from Lebanon and always made me pita with this cheese on top. It's a salty, squeaky(?) cheese that tastes kind of bland on its own but amazing when melted.
I moved to a different state and there's a ton of middle eastern markets, but I can't find it anywhere because no one knows what I'm talking about when I ask for "spanish cheese". Someone told me to try akkawi but that wasn't it, either. :( If anyone knows a specific name for this cheese, I'd be grateful.
